arrive late in the evening. There were no hotels or lodging places to accom-
modate such peopie and it never occurred to us that we needed them. The
door of that big, old ranch house was never closed to them. The stranger
was invited to come in and sit down in our circle round the friendly box
stove and later, to join us in supper. Most likely that supper would consist
of good Canadian fried potatoes and cold meat. We did not offer these to
our guest because of any culinary excellence that they possessed or any
pride we had in placing them boastfully before him. They were simply
what we had at hand, we liked them, they served us well and we hoped they
would give him pleasure and nourish him. They were offered without apology
or excuse. And so when our Service swings the door of Canada open for you,
you will find inside just such simple elements as our fried potatoes and cold
beef. We want to share them with you, these things which are part of our
daily life, and so we invite you to come in. :
