The good result the Norwegian canning industry
can thus show in having in a comparatively short
period established a recognised name throughout
the world is due to various circumstances; in the
first place, to the rich supply of fresh raw mate-
rials, secondly, the systematic application of
scientific methods, and thirdly, to the invention
of special machines. Scientists have demonstrated
that the vitamins occurring in fish are not adverse-
ly affected by preservation methods, and that
Norwegian fish conserves such as brisling, smaa-
sild, and kippered herrings are very rich in
vitamins. Further, it has been proved that Norwe-
gian canned fish possesses a high iodine value
— a factor of prime importance in a food so
widely used.
