of Norwegian fish products and has comprised most kinds of fresh and prepared fish, including klipfish, which is so well known in the Cuban and other markets, and of which further mention will be made below. As will be known, klipfish is dried cod that is salted prior to being dried. During this treat- ment the iodine value is naturally reduced to some extent, but tests have revealed that the finished klipfish nevertheless contains approximately 30 per cent. of the original iodine value. This is sufficient to characterize also klipfish as a pro- duct that is unusually rich in iodine and as a valuable agent in combating goitre. The cod is caught round the entire coast of Norway throughout the year, but it is the great seasonal fisheries in the northern districts that supply the preponderating part of the raw mate- rial required for the production of these consider- able quantities of Norwegian klipfish. The seasonal fisheries proceed from the end of January to the end of March in the Lofotens and other waters, and from April to midsummer in Finmark. In other countries the fishermen must, as a rule, go far out to sea to secure their catches. In Norway, on the contrary, the fishing is done near the coast and from small but fast boats — the majority of them fitted with motor-engines. These favourable conditions are attributable to the nature of the sea-bottom and to the temperature of the 144
